- 1 whole turkey 12-14 lbs, thawed and patted dry
- 2 tbsp paprika
- 1 tbsp cayenne pepper
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tsp dried thyme or oregano
- 2 tsp salt
- 1/4 cup olive oil or mayonnaise
- Optional Additions:
- 1 tbsp citrus zest lemon or orange
- Citrus slices for cavity
- 2 tbsp honey or maple syrup for final glaze
- 1 tsp garam masala or chipotle powder
Preheat oven to 500°F (260°C).
Mix all spices in a bowl. Add olive oil or mayonnaise to form a paste.
Rub half the mixture under the turkey skin and the rest over the exterior.
Place turkey on a rack in a roasting pan.
Roast for 30 minutes at 500°F to brown and crisp the skin.
Lower oven temperature to 350°F (175°C). Cover the breast loosely with foil.
Continue roasting for 2-2.5 hours or until internal temp reaches 165°F (74°C).
Remove from oven and let rest 20-30 minutes.
Carve, garnish with herbs or citrus, and serve hot.
For extra heat, add more cayenne or use chili flakes.
Add a glaze of honey/maple syrup in the final 30 minutes for a sweet-spicy balance.
