- 1 lb ground turkey
- 1 medium onion diced
- 2 large carrots diced
- 1 cup chickpeas rinsed and drained
- 1 cup kidney beans rinsed and drained
- 1 cup black beans rinsed and drained
- 1 14 oz can diced tomatoes
- 2 tbsp tomato paste
- 2 cups chicken broth
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1 tbsp olive oil
- Salt and pepper to taste
Heat olive oil in a large pot over medium heat. Add diced onions and carrots, and cook until softened (about 5–7 minutes).
Add ground turkey and cook, breaking it apart with a spoon, until fully browned.
Stir in the chickpeas, kidney beans, black beans, diced tomatoes, and tomato paste.
Pour in the chicken broth, then add cumin, chili powder, smoked paprika, salt, and pepper. Mix well.
Bring the chili to a boil, then reduce heat to a simmer. Cover and cook for 30–40 minutes, stirring occasionally.
Taste and adjust seasoning as needed. Serve hot with your favorite garnishes.
