Ingredients
  

  • 1 lb ground turkey
  • 1 medium onion diced
  • 2 large carrots diced
  • 1 cup chickpeas rinsed and drained
  • 1 cup kidney beans rinsed and drained
  • 1 cup black beans rinsed and drained
  • 1 14 oz can diced tomatoes
  • 2 tbsp tomato paste
  • 2 cups chicken broth
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add diced onions and carrots, and cook until softened (about 5–7 minutes).
  • Add ground turkey and cook, breaking it apart with a spoon, until fully browned.
  • Stir in the chickpeas, kidney beans, black beans, diced tomatoes, and tomato paste.
  • Pour in the chicken broth, then add cumin, chili powder, smoked paprika, salt, and pepper. Mix well.
  • Bring the chili to a boil, then reduce heat to a simmer. Cover and cook for 30–40 minutes, stirring occasionally.
  • Taste and adjust seasoning as needed. Serve hot with your favorite garnishes.

Freeze leftovers in individual containers for quick lunches.
